Description
Simple, naturally sweet cookies made with only two main ingredients: ripe banana and oats. These are quick to prepare and require minimal effort.

- 1 cup quick oats
- 1 large overripe banana, mashed to a liquid-like consistency
- 1/2 cup chocolate chips or other add-ins of your choice, optional
Instructions
- Preheat your oven to 350°F. Line a baking sheet with a silicone baking mat.
- In a large bowl, combine the oats and mashed banana. Mix with a fork until you have an evenly mixed, thick batter. If you are using add-ins like chocolate chips, mix them in now.
- Form 8 round balls from the cookie batter. Place them onto the prepared baking sheet, spacing them about 2 inches apart. Gently press down on each ball to flatten it into a round disc. Remember that the cookies will not spread much while baking, so shape them as you want them to look after baking.
- Bake for about 15 minutes, or until the cookies are lightly brown and set. The bottoms should also be brown and lift easily from the baking sheet.
- Let the cookies cool before you eat them. Store any leftovers in the refrigerator.
Notes
- Use quick oats for the best texture.
- The banana must be very ripe (mostly brown spots) to provide enough moisture and natural sweetness.
