Make taco night easier with these sweet bell peppers filled with seasoned ground beef, rice, and melted cheddar cheese, baked until tender.

- 4 red bell peppers
- 1 pound lean ground beef
- 0.5 cup cooked rice
- 10 ounces Rotel diced tomatoes and green chiles, drained
- 1.25 ounces low sodium taco seasoning packet
- 1 cup shredded cheddar cheese
Instructions
- Preheat your oven to 350 degrees F.
- Wash the peppers and slice off the tops. Remove all seeds and membranes from the inside.
- Place the peppers in a large pot, fill with water, and bring to a boil. Remove from heat and let them sit for 5 minutes. Remove the peppers from the water and set them aside.
- In a large saucepan, brown the ground beef until fully cooked. Drain the fat.
- Add the rice, diced tomatoes, and taco seasoning to the meat. Mix until everything combines.
- Place the peppers in an 8 x 8 inch baking dish and fill them to the top with the meat mixture.
- Top with cheese and bake for 30 minutes or until the peppers are soft and the cheese is melted.
- Serve immediately.
