Instructions
- Combine the almond milk, cornstarch, and sugar in a small saucepan over medium heat. Stir well until the ingredients mix.
- Whisk the mixture constantly as it heats to prevent clumps from forming.
- When the mixture reaches a simmer, reduce the heat to low and keep whisking.
- Continue whisking for about 5 to 7 minutes until the mixture thickens to a pudding consistency.
- Remove the pan from the heat. Stir in the vanilla extract and the pinch of salt, if you are using it.
- Divide the pudding evenly into four cups or containers.
- Refrigerate the containers for at least one hour so the pudding sets and chills completely.
