A quick and moist banana bread recipe made easily in your air fryer, perfect for small batches.

- 1 small to medium banana, mashed
- 1 egg
- 2 tablespoons brown sugar
- 2 tablespoons oil
- 1/4 cup milk
- 3/4 cup all-purpose flour
- 1/2 teaspoon baking soda
- 1 pinch salt
- 1 pinch cinnamon or nutmeg (optional)
- Optional extras: raspberries, blueberries, chocolate chips, coconut, nuts, 1/2 teaspoon vanilla
Instructions
- Line a very small ovenproof baking pan, glass dish, or mini loaf pan (about 5 square inches or 5×3 inches) with baking paper and trim. Spray the paper with a little oil.
- Pre-heat your air fryer or oven to 320F/160C.
- In a small bowl, whisk the egg into the mashed banana. Then whisk in the sugar, oil, and milk.
- Add the flour, baking soda, and salt. Mix until just combined. Add a little more milk if the mixture seems dry.
- Fold in any mix-ins you choose, like chocolate chips or nuts.
- Pour the batter into the prepared pan.
- Bake in your air fryer for 30 to 35 minutes or in your oven for 25 minutes, or until a skewer inserted into the center comes out clean. Some stickiness is acceptable.
- Let the bread cool for 10 minutes in the pan, then transfer it to a wire rack to cool completely.
Notes
- You can use light olive oil, canola oil, coconut oil, or melted butter for the fat.
- Any milk works, including non-dairy options like almond or soy milk.
- If you use self-raising flour, skip the baking soda.
- Different flours, like whole wheat or coconut, absorb more liquid; add more milk if the batter seems too thick.
