Description
A healthy and balanced meal with marinated chicken, tomato cucumber salad, and couscous, cooked quickly in an air fryer.
Ingredients

- 1 pound boneless skinless chicken thighs or chicken breast
- ½ cup Greek yogurt
- ½ lemon
- 1.5 teaspoons dried oregano
- ½ teaspoon garlic powder
- ½ teaspoon salt
- ¼ teaspoon ground black pepper
- 2 tomatoes (roma or campari)
- ½ cup diced cucumber (English or Persian seedless cucumber)
- ¼ red onion, peeled and thinly sliced
- 2 Tablespoons olive oil
- 2 Tablespoons red wine vinegar

- 1 Tablespoon Feta cheese, crumbled
- ½ cup Moroccan couscous
- ½ cup water
Instructions
- Prepare the chicken marinade by mixing Greek yogurt, lemon juice, oregano, garlic powder, salt, and pepper in a bowl.
- Pat chicken dry. If using chicken breast, slice it in half. Coat chicken with marinade, cover, and set aside for 30 minutes.
- Dice tomatoes and mix with cucumber, red onion, olive oil, red wine vinegar, salt, and pepper. Let marinate for 15 minutes, stirring every 5 minutes.
- Prepare couscous by adding boiling water, covering, and letting sit for 10 minutes. Fluff with a fork.
- Preheat air fryer to 400°F (200°C) for 5 minutes. Cook chicken for 13-16 minutes until internal temperature reaches 165°F. Let rest for 5 minutes.
- Assemble bowls with couscous, tomato cucumber salad, and sliced chicken. Top salad with feta.
Notes
- For crispier chicken, flip halfway through cooking.
