Air Fryer BBQ Chicken Bowls

Description

A healthy and balanced meal with marinated chicken, tomato cucumber salad, and couscous, cooked quickly in an air fryer.


Ingredients

  • 1 pound boneless skinless chicken thighs or chicken breast
  • ½ cup Greek yogurt
  • ½ lemon
  • 1.5 teaspoons dried oregano
  • ½ teaspoon garlic powder
  • ½ teaspoon salt
  • ¼ teaspoon ground black pepper
  • 2 tomatoes (roma or campari)
  • ½ cup diced cucumber (English or Persian seedless cucumber)
  • ¼ red onion, peeled and thinly sliced
  • 2 Tablespoons olive oil
  • 2 Tablespoons red wine vinegar
  • salt
  • pepper
  • 1 Tablespoon Feta cheese, crumbled
  • ½ cup Moroccan couscous
  • ½ cup water

Instructions

  1. Prepare the chicken marinade by mixing Greek yogurt, lemon juice, oregano, garlic powder, salt, and pepper in a bowl.
  2. Pat chicken dry. If using chicken breast, slice it in half. Coat chicken with marinade, cover, and set aside for 30 minutes.
  3. Dice tomatoes and mix with cucumber, red onion, olive oil, red wine vinegar, salt, and pepper. Let marinate for 15 minutes, stirring every 5 minutes.
  4. Prepare couscous by adding boiling water, covering, and letting sit for 10 minutes. Fluff with a fork.
  5. Preheat air fryer to 400°F (200°C) for 5 minutes. Cook chicken for 13-16 minutes until internal temperature reaches 165°F. Let rest for 5 minutes.
  6. Assemble bowls with couscous, tomato cucumber salad, and sliced chicken. Top salad with feta.

Notes

  • For crispier chicken, flip halfway through cooking.
