Description

A quick and healthy one-pan meal with chicken and vegetables, cooked in an air fryer.


Ingredients

  • 1 pound chicken breasts, skinless and boneless, chopped into 1-inch chunks
  • 2 medium zucchini, sliced into 1/2 circles
  • 1 medium squash, sliced into 1/2 circles
  • 2 cups broccoli florets
  • 2 tablespoons olive or avocado oil, or spray
  • 1 tablespoon Italian seasoning
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 3/4 teaspoon chili powder
  • 3/4 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Preheat air fryer to 400°F.
  2. In a large bowl, mix chicken, zucchini, squash, and broccoli. Add oil and seasonings. Toss to coat.
  3. Place mixture in the air fryer. Cook for 10 minutes, stir, then cook another 5-10 minutes until chicken is done and vegetables are tender.
