Description
A quick and healthy one-pan meal with chicken and vegetables, cooked in an air fryer.
Ingredients

- 1 pound chicken breasts, skinless and boneless, chopped into 1-inch chunks
- 2 medium zucchini, sliced into 1/2 circles
- 1 medium squash, sliced into 1/2 circles
- 2 cups broccoli florets
- 2 tablespoons olive or avocado oil, or spray
- 1 tablespoon Italian seasoning
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 3/4 teaspoon chili powder
- 3/4 teaspoon salt
- 1/2 teaspoon black pepper
Instructions
- Preheat air fryer to 400°F.
- In a large bowl, mix chicken, zucchini, squash, and broccoli. Add oil and seasonings. Toss to coat.
- Place mixture in the air fryer. Cook for 10 minutes, stir, then cook another 5-10 minutes until chicken is done and vegetables are tender.
