Description

A naturally gluten-free banana bread recipe using almond flour for a moist, tender crumb and rich flavor.


Ingredients

  • 2 medium -large bananas, mashed
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 cup granulated sugar (or maple syrup, coconut sugar, or sugar-free sweetener)
  • 2 large eggs (use flax eggs for vegan option)
  • 1 teaspoon pure vanilla extract
  • 2 1/2 cups superfine blanched almond flour

Instructions

  1. Preheat your oven to 350°F (177°C). Spray a 9 x 5-inch loaf pan with gluten-free cooking spray.
  2. In a large bowl, mash the bananas until smooth. Add the baking soda, baking powder, cinnamon, and salt. Mix until fully combined.
  3. Add the eggs, pure vanilla extract, and your chosen sweetener to the banana mixture. Mix until fully combined.
  4. Add the almond flour to the banana mixture. Mix until fully combined.
  5. Scoop the thick batter into the greased loaf pan. Smooth the top of the batter with a spatula or the back of a spoon.
  6. Bake on the center rack for 50 minutes. Watch your oven, as baking times vary.
  7. Allow the bread to cool before slicing and serving.
  8. Store leftovers in an airtight container. The cooled loaf can be wrapped in foil or plastic wrap and frozen for up to 3 months.
