Description

Make these quick, protein-rich apple cinnamon muffin bites. They are a healthy snack perfect for meal prepping for the week.


Ingredients

  • 1/4 cup melted butter
  • 1/2 cup unsweetened applesauce
  • 1/2 cup 2% or full-fat plain or vanilla Greek yogurt
  • 1 large egg
  • 1 teaspoon pure vanilla extract
  • 1 1/2 cups quick cooking oats
  • 1/2 cup all-purpose flour
  • 1/2 cup cane sugar
  • 2/3 cup Puori PW1 vanilla whey protein powder (60 g)
  • 1 1/2 teaspoons ground cinnamon
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon fine salt
  • 1 cup diced apple, cut to about 1/2-inch pieces

Instructions

  1. Preheat the oven to 350°F. Mist a standard muffin pan with cooking spray or line with muffin liners and mist those, or use a silicone muffin pan.
  2. In a mixing bowl, combine the melted butter, applesauce, yogurt, egg, and vanilla.
  3. Add the oats, flour, sugar, protein powder, cinnamon, baking powder, baking soda, and salt. Mix until combined, then gently fold in the diced apples.
  4. Divide the batter among the prepared muffin cups. Bake for 20-22 minutes.
  5. Remove from the oven and let the muffins cool in the pan for 5 minutes before removing to a wire rack to cool completely.
