Ingredients

  • 1 3-oz. raw boneless skinless chicken breast cutlet
  • 1/8 tsp garlic powder
  • 1/8 tsp onion powder
  • 1 tbsp BBQ sauce (45 calories or less per 2-tbsp. serving)
  • 1 large high-fiber flour tortilla (110 calories or less)
  • 1/4 cup shredded reduced-fat Mexican-blend cheese
  • 2 tbsp chopped red onion
  • 1 tbsp chopped fresh cilantro
  • nonstick spray

Instructions

  1. Heat a skillet sprayed with nonstick spray over medium-high heat. Season chicken with garlic and onion powder, then cook for 4 minutes per side until done.
  2. Chop the cooked chicken and coat with BBQ sauce in a small bowl.
  3. Place tortilla flat and spread BBQ chicken on one half. Top with cheese, red onion, and cilantro.
  4. Clean and respray the skillet. Cook the loaded tortilla for 2 minutes.
  5. Fold the bare half over the filling, press lightly, and flip. Cook until crispy, about 3 minutes.
  6. Slice into wedges and serve.
