Description

Make a fast, flavorful one-pan dinner using ground beef, corn, and taco seasoning. This dish delivers bold Tex-Mex flavor with simple ingredients for an easy weeknight meal.

Ingredients

Scale
  • 1 lb ground beef
  • 1 small onion, finely diced
  • 2 garlic cloves, minced
  • 1 packet taco seasoning OR: 1 tsp cumin, 1 tsp chili powder, ½ tsp smoked paprika, ½ tsp oregano, ¼ tsp onion powder, Salt & pepper
  • 1 cup corn kernels (fresh, frozen, or canned & drained)
  • 1 can black beans, rinsed
  • 1 cup salsa (mild or spicy)
  • ½ cup beef broth or water
  • 11 ½ cups shredded Mexican cheese blend
  • Fresh cilantro
  • Lime wedges
  • Diced tomatoes (optional)
  • Sliced jalapeños (optional)
  • Sour cream (optional)
  • Tortilla chips (for serving)
  • Warm tortillas (for serving)
  • Rice (for serving)

Instructions

  1. Heat a large skillet over medium-high heat. Add ground beef and break it apart. Cook 5–7 minutes until well-browned. Drain excess fat.
  2. Add the diced onion to the skillet; cook 3 minutes until softened. Add minced garlic; cook 30 seconds.
  3. Sprinkle taco seasoning (or homemade mix) over the beef. Stir to coat evenly. Add a splash of broth or water to activate the spices. Cook 1 minute to bloom the flavors.
  4. Stir in corn and black beans. Add salsa and beef broth. Mix thoroughly. Simmer 5–7 minutes until the sauce thickens and coats the beef mixture.
  5. Reduce heat to low. Sprinkle shredded Mexican cheese blend over the top. Cover skillet with a lid. Let cheese melt 2–3 minutes until bubbly.
  6. Serve the skillet mixture hot with fresh cilantro, lime wedges, diced tomatoes, sliced jalapeños, and sour cream. Serve with tortilla chips, warm tortillas, or over rice.

Notes

  • For extra flavor, let the beef sit undisturbed for 1 minute at a time while browning to develop a crust.
  • If your skillet is oven-safe, you can broil the cheese for 1 minute after melting for a browned crust.
  • Adjust the amount of broth or water based on how saucy you prefer the final dish.
