- 1 small onion, finely diced
- 2 garlic cloves, minced
- 1 packet taco seasoning OR: 1 tsp cumin, 1 tsp chili powder, ½ tsp smoked paprika, ½ tsp oregano, ¼ tsp onion powder, Salt & pepper
- 1 cup corn kernels (fresh, frozen, or canned & drained)
- 1 can black beans, rinsed
- 1 cup salsa (mild or spicy)
- ½ cup beef broth or water
- 1–1 ½ cups shredded Mexican cheese blend
- Fresh cilantro
- Lime wedges
- Diced tomatoes (optional)
- Sliced jalapeños (optional)
- Sour cream (optional)
- Tortilla chips (for serving)
- Warm tortillas (for serving)
- Rice (for serving)
Instructions
- Heat a large skillet over medium-high heat. Add ground beef and break it apart. Cook 5–7 minutes until well-browned. Drain excess fat.
- Add the diced onion to the skillet; cook 3 minutes until softened. Add minced garlic; cook 30 seconds.
- Sprinkle taco seasoning (or homemade mix) over the beef. Stir to coat evenly. Add a splash of broth or water to activate the spices. Cook 1 minute to bloom the flavors.
- Stir in corn and black beans. Add salsa and beef broth. Mix thoroughly. Simmer 5–7 minutes until the sauce thickens and coats the beef mixture.
- Reduce heat to low. Sprinkle shredded Mexican cheese blend over the top. Cover skillet with a lid. Let cheese melt 2–3 minutes until bubbly.
- Serve the skillet mixture hot with fresh cilantro, lime wedges, diced tomatoes, sliced jalapeños, and sour cream. Serve with tortilla chips, warm tortillas, or over rice.
Notes
- For extra flavor, let the beef sit undisturbed for 1 minute at a time while browning to develop a crust.
- If your skillet is oven-safe, you can broil the cheese for 1 minute after melting for a browned crust.
