Description

- 3 tablespoons grapeseed oil
- 1 yellow onion, chopped
- 4 fresh garlic cloves, chopped
- 3/4 inch chunk fresh ginger, chopped
- 3 stalks celery, chopped
- 3 teaspoons coriander
- 2 teaspoons turmeric
- 1/2 teaspoon smoked paprika
- 4 cups vegetable broth
- 12 oz package frozen broccoli florets
- 2 cups frozen spinach
- Salt, to taste
- Black pepper, to taste
- Roasted broccoli florets, for serving (optional)
- Chili flakes, for serving (optional)
Instructions
- Add grapeseed oil to a large, heavy bottom pan with a lid.
- Peel and roughly chop the onion, ginger, and garlic cloves.
- Wash and roughly chop the celery.
- Turn the stove to medium heat and add the chopped onion, ginger, garlic, and celery to the pan. Sauté for about 5 minutes, stirring occasionally to prevent burning.
- Add the coriander, turmeric, smoked paprika, vegetable broth, frozen broccoli florets, and frozen spinach to the pan. Cover and simmer for about 10 minutes.
- Turn the stove off and remove the pan from the heat.
- Carefully blend the ingredients until somewhat smooth using a blender or an immersion blender directly in the pan.
- Season the soup with salt and black pepper.
- Serve the soup hot, optionally topped with roasted broccoli florets and/or chili flakes.
