Description
A simple, creamy, and light vegetable soup perfect for a gentle detox or a nourishing weeknight meal.
Ingredients

- 2 heads of cauliflower or two 16oz bags of frozen cauliflower, steamed
- 2 tbsp avocado oil
- 1 onion, cut in half and sliced
- 2 cloves of garlic
- 1 cup water
- 3 cups low sodium vegetable broth
- Juice of one lemon or 3 tbsp
- 2 cups mushrooms, sliced
- 1 cup fresh parsley, divided
- Salt and pepper, to taste
Instructions
- Steam cauliflower for 12 minutes until tender.
- While the cauliflower steams, sauté half of the sliced onion and all of the mushrooms in avocado oil until both are browned and tender. Add water as needed if the onions and mushrooms stick to the pan.
- Place the steamed cauliflower in a blender. Add the vegetable broth, avocado oil, water, 2 garlic cloves, lemon juice, 1 tbsp of fresh parsley, salt, pepper, and either a quarter of a raw onion or half of the sautéed onion mixture for spice preference.
- Blend until smooth and creamy. Adjust salt and pepper as needed. If the soup is cool, heat it in a pot for a few minutes.
- Pour the soup into bowls. Top with the remaining sautéed onions and mushrooms, and a handful of fresh parsley. Sprinkle with extra salt and pepper.
- Serve immediately.
Notes
- To make the soup not spicy, sauté the entire onion with the 2 garlic cloves. Add half of the cooked onion and garlic to the blender with the other ingredients. If you cook the entire onion, add half of it to the blender; otherwise, add a quarter of a raw onion to the blender.
- Store leftovers in airtight containers for up to 4 or 5 days in the refrigerator.
