  • 1 lb. smoked sausage, sliced into rounds
  • 1½ cups shredded cheddar cheese
  • 1 packet ranch seasoning mix (1 oz.)
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • ½ teaspoon black pepper
  • 1 tablespoon fresh parsley (optional, for garnish)
  • ½ cup sour cream (optional, for serving)
  • ¼ cup sliced green onions (optional, for garnish)

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or foil.
  2. In a large bowl, toss potatoes with olive oil, garlic powder, paprika, ranch seasoning, and black pepper.
  3. Spread potatoes in a single layer on the baking sheet.
  4. Roast for 25-30 minutes, shaking halfway, until golden and crispy.
  5. Remove from oven, add sausage, and mix evenly.
  6. Sprinkle cheese over the top and roast for 10-15 more minutes until melted.
  7. Garnish with parsley and green onions. Serve with sour cream if desired.
