Ingredients

  • 1 sheet puff pastry, thawed
  • 2 cups fresh spinach, chopped
  • 1 garlic clove, minced
  • ¼ teaspoon sea salt
  • ¼ teaspoon ground black pepper
  • ½ cup ricotta cheese
  • ¼ cup shredded mozzarella
  • 1 egg, beaten

Instructions

  1. Preheat the oven to 400°F and line a baking sheet with parchment paper.
  2. Sauté spinach with garlic, salt, and pepper for 2 minutes until wilted. Let cool.
  3. Roll out puff pastry and cut into 10 circles or squares.
  4. Spread ricotta on each pastry, add spinach, and sprinkle mozzarella.
  5. Brush tops with beaten egg.
  6. Bake for 18–20 minutes until golden brown.
  7. Serve warm.
