- 2 cups fresh spinach, chopped
- 1 garlic clove, minced
- ¼ teaspoon sea salt
- ¼ teaspoon ground black pepper
- ½ cup ricotta cheese
- ¼ cup shredded mozzarella
- 1 egg, beaten
Instructions
- Preheat the oven to 400°F and line a baking sheet with parchment paper.
- Sauté spinach with garlic, salt, and pepper for 2 minutes until wilted. Let cool.
- Roll out puff pastry and cut into 10 circles or squares.
- Spread ricotta on each pastry, add spinach, and sprinkle mozzarella.
- Brush tops with beaten egg.
- Bake for 18–20 minutes until golden brown.
- Serve warm.

- Use thawed frozen spinach if needed, squeezing out excess water.
- Drain sautéed spinach well.
