Description

Transform traditional chicken noodle soup into a rich, oven-baked dish featuring tender chicken, hearty noodles, and a creamy sauce topped with a golden, buttery crust.

  • 12 oz. wide egg noodles
  • 2 (10.5-oz.) cans cream of chicken soup
  • 1 cup whole milk
  • 1 cup shredded sharp cheddar cheese
  • 1 tsp. ground black pepper
  • 1/2 tsp. kosher salt
  • 3 cups cooked, shredded chicken
  • 1/2 small yellow onion, finely chopped
  • 2 celery stalks, finely chopped
  • 1 (12-oz.) bag frozen peas and carrots, thawed
  • 1 1/2 cups coarsely crushed butter crackers
  • 2 Tbsp. unsalted butter, melted
  • Chopped parsley, to serve

Instructions

  1. Preheat the oven to 375°F. Bring a large pot of salted water to a boil over medium-high heat. Add the egg noodles and cook until just al dente, about 7 minutes. Drain the noodles and set them aside.
  2. In a large bowl, stir together the cream of chicken soup, milk, cheese, pepper, and salt. Stir in the shredded chicken, chopped onion, celery, thawed peas, and carrots. Gently fold in the cooked egg noodles.
  3. Transfer the mixture to a 13-by-9-inch baking dish and spread it in an even layer.
  4. In a medium bowl, stir together the crushed cracker crumbs and melted butter. Sprinkle this mixture evenly over the casserole.
  5. Bake until the casserole is heated through and the topping is lightly browned, 30 to 35 minutes. Sprinkle with chopped parsley before serving.

Notes

  • For the topping, you can substitute breadcrumbs for the butter crackers if desired.
  • You can use rotisserie chicken for convenience, or cook and shred your own chicken breasts.
