Description

A quick and flavorful stir fry with tender chicken, crisp vegetables, and a savory-sweet sauce.


Ingredients

  • 1 lb boneless, skinless chicken breast cut into 1 inch cubes
  • salt and pepper to taste
  • 2 tbsp olive oil divided
  • 2 cups broccoli florets
  • 1/2 yellow bell pepper cut into 1 inch pieces
  • 1/2 red bell pepper cut into 1 inch pieces
  • 1/2 cup baby carrots sliced
  • 2 tsp minced ginger
  • 2 garlic cloves minced
  • 1 tbsp corn starch
  • 2 tbsp cold water
  • 1/4 cup low sodium chicken broth
  • 3 tbsp low sodium soy sauce
  • 1/4 cup honey
  • 1 tbsp toasted sesame oil
  • 1/2 tsp crushed red pepper flakes

Instructions

  1. In a medium bowl, whisk corn starch and water. Add chicken broth, soy sauce, honey, sesame oil, and red pepper flakes. Whisk and set aside.
  2. Heat 1 tbsp olive oil in a large skillet over medium-high heat.
  3. Add chicken, season with salt and pepper, and cook for 3-5 minutes until done. Remove from skillet.
  4. Reduce heat to medium, add remaining oil.
  5. Add broccoli, bell peppers, and carrots. Cook until crisp-tender.
  6. Add ginger and garlic, cook for 1 minute.
  7. Return chicken to skillet.
  8. Whisk sauce, pour over chicken and vegetables, and stir.
  9. Bring to a boil, stirring occasionally, for 1 minute.
  10. Serve with rice or chow mein if desired.

  • Adjust red pepper flakes for desired spice level.
