Ingredients

  • ¾ cup lightly packed brown sugar
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1 cup room temperature water
  • ⅓ cup neutral-flavored oil
  • 1 tablespoon white vinegar
  • 1 teaspoon vanilla extract
  • ½ cup semisweet chocolate chips
  • Powdered sugar, for dusting

Instructions

  1. Preheat your oven to 350 degrees F. Lightly grease an 8X8-inch baking pan. If you use a glass pan, reduce the oven temperature to 325 degrees F.
  2. Whisk flour, brown sugar, baking soda, and salt together in a medium bowl.
  3. Make a well in the center of the dry ingredients. Add the water, oil, vinegar, vanilla extract, and chocolate chips into the well.
  4. Stir the mixture until it is just combined and you see no dry streaks remaining.
  5. Pour the batter into the prepared pan and spread it evenly.
  6. Bake for 30 to 35 minutes. The cake is done when the top springs back lightly when you touch it and a toothpick comes out clean or with a few moist crumbs. Add extra time if baking in a glass pan at 325 degrees F.
  7. Optionally, dust the top of the cake or individual slices with powdered sugar. Serve the cake warm or at room temperature.

Notes

  • For whole wheat flour, substitute it for the all-purpose flour, but check the texture during mixing.
  • If you use a glass pan, remember to lower the oven temperature to 325 degrees F and check for doneness slightly later.
