Ingredients

  • 4 large eggs, separated
  • 1/2 cup granulated sugar
  • 1/2 cup all-purpose flour
  • 1/4 cup cocoa powder
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 cup heavy cream
  • 1/4 cup powdered sugar
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and line a jelly roll pan with parchment paper.
  2. Beat the egg yolks with granulated sugar until the mixture is thick and pale.
  3. Sift the flour, cocoa powder, baking powder, and salt over the yolk mixture. Fold these dry ingredients in gently.
  4. In a separate bowl, beat the egg whites until stiff peaks form.
  5. Fold the beaten egg whites into the yolk mixture until just combined.
  6. Spread the batter evenly into the prepared pan.
  7. Bake for 12 to 15 minutes, or until the cake is done.
  8. While the cake is still warm, invert it onto a clean towel that you have dusted with powdered sugar. Roll the cake and towel together and let it cool completely.
  9. For the filling, whip the heavy cream, powdered sugar, and vanilla extract until stiff peaks form.
  10. Unroll the cooled cake. Spread the cream filling evenly over the cake surface.
  11. Re-roll the cake carefully. Frost and decorate the outside as you like.
