Ingredients

- 1 medium onion, chopped
- 1 medium green pepper, chopped
- 1 garlic clove, minced
- 2 tablespoons butter
- 1/2 cup chopped tomatoes
- 1/4 cup minced fresh parsley
- 5 large eggs, lightly beaten
- 2 cups shredded mozzarella cheese
- 1/2 cup soft bread crumbs
- 1 teaspoon Worcestershire sauce
- 1/2 to 1 teaspoon salt
- 1/4 teaspoon pepper
Instructions
- Preheat oven to 350°F.
- In a skillet, sauté onion, green pepper, and garlic in butter for 5 minutes or until tender.
- Remove from heat and stir in tomatoes and parsley. Set aside.
- In a large bowl, combine eggs, mozzarella cheese, bread crumbs, Worcestershire sauce, salt, and pepper.
- Stir in the reserved vegetables.
- Pour the mixture into an ungreased 9-inch pie plate.
- Bake uncovered for 25-30 minutes or until a knife inserted in the center comes out clean.
- Let stand for 5 minutes before cutting.
Notes
- You can prepare the vegetable mixture the night before to save time.
- Add cooked sausage or bacon for extra flavor.
