Ingredients

  • 1 medium onion, chopped
  • 1 medium green pepper, chopped
  • 1 garlic clove, minced
  • 2 tablespoons butter
  • 1/2 cup chopped tomatoes
  • 1/4 cup minced fresh parsley
  • 5 large eggs, lightly beaten
  • 2 cups shredded mozzarella cheese
  • 1/2 cup soft bread crumbs
  • 1 teaspoon Worcestershire sauce
  • 1/2 to 1 teaspoon salt
  • 1/4 teaspoon pepper

Instructions

  1. Preheat oven to 350°F.
  2. In a skillet, sauté onion, green pepper, and garlic in butter for 5 minutes or until tender.
  3. Remove from heat and stir in tomatoes and parsley. Set aside.
  4. In a large bowl, combine eggs, mozzarella cheese, bread crumbs, Worcestershire sauce, salt, and pepper.
  5. Stir in the reserved vegetables.
  6. Pour the mixture into an ungreased 9-inch pie plate.
  7. Bake uncovered for 25-30 minutes or until a knife inserted in the center comes out clean.
  8. Let stand for 5 minutes before cutting.
