- 1 lb ground beef
- 4 medium potatoes, peeled and thinly sliced (⅛ inch / 3 mm)
- 1 medium onion, thinly sliced into rings
- 2 garlic cloves, minced
- 2 cups shredded cheddar cheese
- 1 can (10.5 oz) cream of mushroom soup
- ½ cup milk
- ½ cup sour cream
- 1 tsp garlic powder
- 1 tsp onion powder
- ½ tsp paprika
- Salt to taste
- Pepper to taste
- Fresh parsley for garnish (optional)
- A pinch of cayenne for heat (optional)
- Sliced mushrooms (optional)
Instructions
- Preheat your oven to 350°F (175°C). Grease a 9×13 inch baking dish.
- Peel and thinly slice potatoes, ideally using a mandolin. Place slices in cold water to prevent browning, then drain and pat them dry.
- In a large skillet over medium-high heat, brown the ground beef. Add minced garlic and cook for 1 minute. Drain excess fat. Season the beef with salt, pepper, and paprika. Remove from heat.
- Make the creamy sauce: Whisk together cream of mushroom soup, milk, sour cream, garlic powder, onion powder, salt, and pepper until completely smooth.
- Assemble the casserole in three layers. Layer 1: Spread a thin layer of sauce in the dish bottom. Add a layer of potato slices, then a layer of sliced onions. Spoon ⅓ of the cooked beef mixture on top. Drizzle with some sauce and sprinkle with cheddar cheese.
- Layer 2: Repeat the sequence: Potatoes, onions, beef, sauce, and cheese.
- Layer 3: Finish with the remaining potatoes, sauce, and cheese on top. Make sure the top potatoes are well covered in sauce.
- Cover the dish tightly with foil. Bake for 60 minutes.
- Remove the foil and bake for another 20–30 minutes until potatoes are fork-tender and the cheese is golden and bubbling. You can broil for 1–2 minutes at the end for extra browning if desired.
- Let the casserole rest for 10 minutes before slicing. Garnish with parsley if you are using it.
