Classic Chicken Noodle Soup

Description

A comforting and nourishing soup with tender chicken, vegetables, and noodles in a flavorful broth.


Ingredients

  • 1/2 Tablespoon butter
  • 2 ribs celery, diced
  • 34 large carrots, diced
  • 1 clove garlic, minced
  • 10 cups chicken stock or broth
  • 1 teaspoon salt, to taste
  • 1/2 teaspoon freshly ground black pepper, to taste
  • 1/8 teaspoon dried rosemary, or more to taste
  • 1/8 teaspoon dried thyme
  • 1/8 teaspoon crushed red pepper flakes
  • 1 batch homemade egg noodles or 4 cups dry egg noodles, farfalle, or other bite-size pasta
  • 3 cups rotisserie chicken
  • 1 teaspoon better than bouillon chicken flavor or chicken bouillon granules, as needed

Instructions

  1. Melt butter in a large stock pot over medium-high heat. Add celery and carrots. Sauté for 3 minutes.
  2. Add garlic and cook for 30 seconds.
  3. Pour in chicken stock. Season with rosemary, thyme, crushed red pepper, salt, and pepper. Taste and adjust with bouillon if needed.
  4. Bring broth to a boil. Add noodles and cook until al dente.
  5. Remove pot from heat immediately to prevent overcooking noodles.
  6. Stir in rotisserie chicken. Taste and adjust seasonings if needed.
  7. Serve warm. Store leftovers in an airtight container for 4-5 days.

Notes

  • Use homemade egg noodles for extra flavor.
  • Rotisserie chicken saves time and adds depth.
  • Do not overcook noodles; they soften further off heat.
