Description
Festive cake pops with tart cranberries and creamy white chocolate.

- 1/4 cup butter, softened
- 3/4 cup granulated sugar
- 2 large eggs
- 1 cup all-purpose flour
- 1 1/4 teaspoons baking powder
- 1 pinch salt
- 1/2 cup milk
- 2 teaspoons vanilla extract
- 1/4 cup dried cranberries
- 1/4 cup white chocolate chips
- 3 cups white chocolate chips or wafers
- 1 1/2 tablespoons coconut oil
- cinnamon
- dried cranberries, chopped
Instructions
- Mix butter and sugar in a large bowl. Add eggs one at a time.
- Sift flour, baking powder, and salt in another bowl. Stir milk and vanilla together.
- Alternately add flour mixture and milk to butter mixture until combined. Fold in cranberries and chocolate chips.
- Preheat cake pop maker. Fill cavities just below the top. Bake for 3-4 minutes until a toothpick comes out clean. Cool completely.
- Melt chocolate chips and coconut oil in 15-second intervals, stirring between each, until smooth.
- Dip lollipop sticks in melted chocolate and insert halfway into cake balls. Refrigerate for 30 minutes.
- Dip each cake pop in melted chocolate, tapping off excess. Place in a stand.
- Sprinkle with cinnamon and chopped cranberries. Chill for 30 minutes to set.
Notes
- Use a piping bag for easier filling.
- Do not overheat chocolate to avoid lumps.
