Creamy Garlic Chicken Over Mashed Potatoes

Description

This recipe makes tender chicken in a rich garlic cream sauce served over smooth, homemade mashed potatoes. It is a classic comfort meal.


Ingredients

  • 1lb. russet potatoes
  • 1 ½ tablespoon butter for potatoes
  • ¼ cup heavy cream for potatoes
  • Salt, to taste for potatoes
  • 2 large chicken
  • 1 ½ tablespoon butter for chicken
  • ½ tablespoon olive oil
  • ¼ teaspoon garlic powder
  • Salt and pepper, to taste for chicken
  • Chopped parsley, for garnish
  • 1 ½ tablespoon butter for sauce
  • 1 tablespoon mustard
  • 1 teaspoon garlic paste
  • ½ tablespoon flour
  • ½ cup chicken broth
  • Salt and pepper, to taste for sauce
  • ½ cup heavy cream for sauce

Instructions

  1. Peel the potatoes and cut them into equal-sized chunks.
  2. Add the potatoes to a large pot filled with water.
  3. Bring the water to a boil.
  4. Cook the potatoes until fork tender.
  5. Once the potatoes are done, drain the cooking water.
  6. Add 1 ½ tablespoon butter, ¼ cup heavy cream, and salt to taste to the potatoes.
  7. Mash the potatoes with a potato masher until smooth.
  8. Set the mashed potatoes aside and cover to keep them warm.
  9. In the meantime, prepare the chicken; season chicken with salt and pepper, to taste.
  10. Melt 1 ½ tablespoon butter and ½ tablespoon olive oil in a skillet.
  11. Once hot, add the seasoned chicken and cook for 5 minutes per side or until browned.
  12. Remove the chicken from the skillet.
  13. Preheat your oven to 375°F.
  14. Add 1 ½ tablespoon butter and 1 teaspoon garlic paste to the same skillet where you cooked the chicken.
  15. Cook until the butter is melted.
  16. Whisk in ½ tablespoon flour and cook for 1 minute.
  17. Gradually whisk in ½ cup chicken broth.
  18. Whisk in 1 tablespoon mustard, salt, and pepper.
  19. Whisk in ½ cup heavy cream and simmer for 1-2 minutes or until slightly thickened.
  20. Add the cooked chicken back to the skillet with the sauce.
  21. Transfer the skillet to the oven and bake for 15 minutes or until the chicken is cooked through.
  22. Serve mashed potatoes on a plate.
  23. Add the chicken on top and drizzle the sauce over the chicken.
  24. Finish off with chopped parsley.
