- 2 pounds boneless skinless chicken
- 2 tablespoons olive oil
- 4 ounces sliced mushrooms
- 3 whole garlic cloves
- 1/2 cup chicken broth
- 1/2 cup heavy cream
- 1 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1/4 cup minced fresh herbs (thyme, sage, and rosemary)
Instructions
- Place a medium skillet over medium-high heat and add 2 tablespoons olive oil. Add 2 pounds boneless skinless chicken and cook on each side until cooked through and no longer pink. Remove the chicken and set it aside on a plate covered with foil.
- Add 4 ounces sliced mushrooms and 3 whole garlic cloves to the same skillet. Cook for 2-3 minutes or until the mushrooms are tender. Remove the mushrooms and garlic and place them on the plate with the chicken.
- Add 1/2 cup chicken broth, 1/2 cup heavy cream, 1 teaspoon garlic powder, 1/2 teaspoon salt, and 1/4 teaspoon pepper to the skillet. Whisk for 2-3 minutes until the sauce begins to thicken. Add 1/4 cup minced fresh herbs and stir to combine.
- Return the cooked chicken and mushrooms to the skillet. Toss everything to coat it in the sauce. Serve immediately.
