Description
Make this comforting skillet dinner featuring tender chicken smothered in a rich, creamy sauce infused with mellow, sweet roasted garlic.

- 2 lbs chicken
- 2 tbsp butter
- 1 tbsp olive oil

- 1 head of garlic (about 15 cloves)
- 3 tbsp butter (for sauce)
- 3 tbsp all purpose flour (for sauce)
- 2 cups milk
- 1/2 cup grated Parmesan cheese
- salt (for sauce)
- black pepper (for sauce)
- 1 tsp Tabasco (optional)
Instructions
- Break up the head of garlic into individual cloves, keeping the skin on. Heat these cloves in a hot skillet over medium heat. Cook for 15 minutes, stirring often to brown most surfaces. The skins may blacken, but the inside will soften.
- Once cooled, peel or squeeze the roasted garlic cloves out of their skins. Mash the soft garlic with the side of a knife until smooth. Set the roasted garlic aside.
- If the chicken are large, slice each one horizontally to create two thinner cutlets.
- Season both sides of the chicken cutlets with salt, black pepper, and Italian seasoning. Dust each side lightly with flour. Set the seasoned chicken aside.
- In a large skillet over medium-high heat, add 2 tablespoons of butter and the olive oil. Sauté the chicken in batches if necessary, cooking for several minutes on each side until golden brown and crispy. The internal temperature must reach 165°F.
- Remove the cooked chicken from the skillet and place it on a plate or baking dish. Cover with aluminum foil to keep it warm.
- In the same skillet used for the chicken, add the remaining 3 tablespoons of butter and melt it, scraping up any browned bits from the bottom of the pan.
- Add 3 tablespoons of flour to the melted butter and cook for a couple of minutes, stirring constantly.
- Whisk in the milk to create a basic white sauce. Continue whisking until smooth.
- Whisk in the mashed roasted garlic and Parmesan cheese. Cook the sauce for several minutes until it thickens.
- Season the sauce to taste with salt and pepper. Add Tabasco for heat, if you are using it.
- Spoon the roasted garlic cream sauce over the sautéed chicken. Serve immediately. Garnish with chopped parsley if desired.
Notes
- If you prefer a very smooth sauce, pour the finished sauce through a strainer, pressing the solids to extract all the liquid.
