Description

A rich and hearty pasta dish with Italian sausage, sun-dried tomatoes, and a creamy sauce.


Ingredients

  • 1 lb rigatoni pasta
  • 1 lb Italian sausage (mild or spicy)
  • 1 tbsp olive oil
  • 1 tbsp oil from sun-dried tomatoes
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 2 tbsp tomato paste
  • 1/4 cup sun-dried tomatoes, chopped
  • 1 cup chicken broth
  • 1 cup marinara sauce
  • 1/2 cup heavy cream
  • 2 cups fresh spinach
  • 1/2 cup grated Parmesan cheese
  • 1 tsp Italian seasoning
  • 1/4 tsp red pepper flakes
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add sausage and cook until browned, breaking it up with a spoon (5-7 minutes). Remove sausage and set aside.
  2. In the same skillet, add sun-dried tomato oil. Sauté onion and garlic until softened (4-5 minutes). Stir in tomato paste and cook for 1-2 minutes.
  3. Add sun-dried tomatoes, chicken broth, marinara sauce, and rigatoni. Stir to submerge pasta. Bring to a boil, then simmer covered for 15-17 minutes, stirring occasionally.
  4. When pasta is al dente, stir in heavy cream and spinach. Cook until spinach wilts (2-3 minutes). Season with Italian seasoning, red pepper flakes, salt, and pepper.
  5. Turn off heat and stir in Parmesan cheese a little at a time. Mix in cooked sausage. Adjust seasoning if needed.
