  • 12 ounces (340 g) dried pasta any shape
  • 2 tablespoons (30 ml) olive oil
  • 1 pound (450 g) chicken
  • ½ teaspoon salt
  • ¼ teaspoon ground black pepper
  • 1 tablespoon butter
  • 3 cloves garlic minced
  • ½ cup (120 ml) heavy cream
  • 1 tablespoon (15 ml) lemon juice
  • ¼ cup (21 g) parmesan grated
  • 2 tablespoons chopped fresh parsley chopped, for garnish
  • 1 teaspoon lemon zest optional, for garnish

Instructions

  1. Boil water in a saucepan, salt it, and cook the pasta according to package directions.
  2. In a separate pan, heat olive oil over medium-high heat. Add the chicken, season with salt and pepper, and cook for 4-5 minutes until the internal temperature reaches 165°F (74°C).
  3. Move the cooked chicken to the sides of the pan. Melt the butter in the center. Add the minced garlic and cook for 1 minute.
  4. Add the heavy cream and lemon juice. Whisk or stir until you have a smooth sauce.
  5. Add the grated parmesan and stir until it melts into the sauce.
  6. If the sauce is too thick, add a small amount of pasta water to loosen it, then whisk again.
  7. Add the cooked pasta and the chicken back into the pan. Mix everything together until the pasta is coated with the sauce and chicken.
  8. Taste the pasta and adjust seasonings as needed.
  9. Garnish with extra parmesan cheese, chopped parsley, and lemon zest before serving.
