- 12 ounces (340 g) dried pasta any shape
- 2 tablespoons (30 ml) olive oil
- 1 pound (450 g) chicken
- ½ teaspoon salt
- ¼ teaspoon ground black pepper
- 1 tablespoon butter
- 3 cloves garlic minced
- ½ cup (120 ml) heavy cream
- 1 tablespoon (15 ml) lemon juice
- ¼ cup (21 g) parmesan grated
- 2 tablespoons chopped fresh parsley chopped, for garnish
- 1 teaspoon lemon zest optional, for garnish
Instructions
- Boil water in a saucepan, salt it, and cook the pasta according to package directions.
- In a separate pan, heat olive oil over medium-high heat. Add the chicken, season with salt and pepper, and cook for 4-5 minutes until the internal temperature reaches 165°F (74°C).
- Move the cooked chicken to the sides of the pan. Melt the butter in the center. Add the minced garlic and cook for 1 minute.
- Add the heavy cream and lemon juice. Whisk or stir until you have a smooth sauce.
- Add the grated parmesan and stir until it melts into the sauce.
- If the sauce is too thick, add a small amount of pasta water to loosen it, then whisk again.
- Add the cooked pasta and the chicken back into the pan. Mix everything together until the pasta is coated with the sauce and chicken.
- Taste the pasta and adjust seasonings as needed.
- Garnish with extra parmesan cheese, chopped parsley, and lemon zest before serving.
