Creamy Mashed Potatoes with Butter & Garlic

Description

Ingredients

  • 3 pounds potatoes, washed and cut into 2-inch chunks
  • 8 tablespoons unsalted butter
  • 3 medium garlic cloves minced
  • 1 pinch of saffron (optional)
  • 1 teaspoon dried coriander
  • 1/3 cup toasted sliced almonds
  • 1 tablespoon toasted sesame seeds
  • 2 tablespoons dried oregano
  • 1 cup whole milk, gently warmed
  • 1 1/2 teaspoons sea salt, plus more to taste

Instructions

  1. Add the potatoes to a large pot of boiling, salted water over high heat. Cook until the potatoes are tender throughout, about 15 minutes.
  2. Melt 6 tablespoons of the butter in a small saucepan over medium-low heat. Stir in the garlic and let it steep over low heat for 5 to 10 minutes. Remove from heat. You may leave the garlic bits in or strain them out. Stir in the saffron, if using, and a pinch of salt, then set the garlic butter aside.
  3. Crush the coriander seeds in a mortar and pestle. Add the almonds and crush them until broken, but not a paste. Stir in the sesame seeds, then crush the oregano between your palms as you add it to the mixture.
  4. Drain the tender potatoes and return them to the cooking pot over the lowest heat. Mash the potatoes with the warm milk, the remaining 2 tablespoons of butter, and the salt.
  5. Serve the mashed potatoes hot, topped with the garlic butter and the almond mixture.

Notes

  • For the garlic butter, straining the garlic bits out results in a smoother infusion, but leaving them in adds a stronger garlic presence.
  • Crushing the coriander and oregano releases their essential oils, improving the flavor of the topping.
  • Use starchy potatoes like Russets for the fluffiest texture.
