Creamy One-Pan Beef Pasta

Description

Make a rich, comforting beef pasta dinner entirely in one pan for minimal cleanup and maximum flavor development.


Ingredients

  • 1 tsp Salt
  • 3/4 tsp Smoked Paprika
  • 1/2 tsp Dried Oregano
  • 1/2 tsp Black Pepper
  • 1/41/2 tsp Chilli Flakes
  • 1/4 tsp Dried Thyme
  • 1 medium White Onion, finely diced
  • 3 cloves of Garlic, finely diced
  • 500g / 1lb Minced/Ground Beef (12% fat recommended)
  • 2 tbsp Tomato Puree
  • 600ml / 2 1/2 cups Beef Stock, warm
  • 500ml / 2 cups Tomato Passata
  • 180ml / 3/4 cup Double/Heavy Cream, at room temperature
  • 1 tsp Worcestershire Sauce
  • 300g / 10.5oz uncooked Conchiglie Pasta
  • Olive Oil, as needed
  • finely diced Fresh Parsley, to serve (optional)

Instructions

  1. Add a drizzle of olive oil to a large pot over medium heat. Fry the onion until it softens and turns golden.
  2. Add the garlic and fry for one minute more. Add the ground beef. Break it up with your spoon until browned.
  3. Stir in the seasoning mix. Stir in the tomato puree and fry for about one minute.
  4. Stir in the beef stock, tomato passata (swill out the container with a splash of water), cream, and Worcestershire sauce. Stir in the uncooked pasta.
  5. Bring the mixture to a boil. Cook until the sauce thickens and the pasta is al dente, stirring frequently.
  6. If the sauce reduces too much before the pasta is cooked, add a splash of hot water as needed to finish cooking the pasta.
  7. Check the seasoning and adjust salt, pepper, and chilli flakes. Serve with fresh parsley if you wish.

Notes

  • Conchiglie pasta works well because its shape holds the sauce. You can substitute with other short pasta shapes like penne or rotini.
  • Ensure your beef stock is warm, not boiling hot, when adding it to the pan to maintain cooking temperature.
  • Cooking everything in one pan allows the flavors to develop together, creating a cohesive sauce.
