Make this hearty, one-pot soup featuring Italian sausage, cheese tortellini, and vegetables in a rich, creamy broth. It is a comforting meal perfect for cool weather.

- 1 tbsp olive oil
- 1 lb (450 g) Italian sausage, casings removed
- 1 medium onion, chopped
- 3 garlic cloves, minced
- 2 medium carrots, sliced
- 2 celery stalks, sliced
- 1 medium potato, diced
- 1 tsp Italian seasoning
- ½ tsp smoked paprika
- ½ tsp dried thyme
- Salt & pepper to taste
- 4 cups (960 ml) chicken broth
- 1 can (14.5 oz / 410 g) diced tomatoes
- 1 cup heavy cream
- 1 tbsp tomato paste
- 9 oz (250 g) cheese tortellini
- 2 cups fresh spinach
- ¼ cup grated Parmesan
- 1 tbsp fresh lemon juice (optional)
Instructions
- Heat olive oil in a large soup pot over medium-high heat. Add the Italian sausage, breaking it apart with a spatula. Cook 6–7 minutes until browned. Remove excess fat if you wish.
- Add the chopped onion, carrots, and celery to the pot. Cook 5 minutes, stirring often, until vegetables soften slightly.
- Add minced garlic and cook 1 minute. Season with Italian seasoning, smoked paprika, thyme, salt, and pepper. Stir and cook for 30 seconds.
- Stir in the diced tomatoes and tomato paste. Mix well. Pour in the chicken broth and add the diced potato, if using. Bring the soup to a gentle boil.
- Reduce heat to medium-low and simmer 12–15 minutes, until vegetables are tender.
- Increase heat to medium. Add tortellini and cook 4–6 minutes, until they float and soften.
- Reduce heat to low and gently stir in the heavy cream. Do not boil after adding cream. If the soup is too thick, add extra broth or water.
- Stir in fresh spinach until wilted (1–2 minutes). Add grated Parmesan.
- Taste and adjust seasoning. Add lemon juice if you are using it.
- Ladle into bowls and garnish with extra Parmesan, black pepper, and fresh herbs before serving.
Notes
- This recipe yields 6 servings.
- If you skip the potato, the broth will be thinner, but the soup will cook faster.
- Do not boil the soup after adding the heavy cream to prevent separation.
