- 2 chicken breasts cut in half lengthwise
- Salt & pepper to taste
- 1 tablespoon olive oil
- 1 tablespoon butter
- 3 cloves garlic minced
- 1/4 cup chicken broth
- 1 (10 fluid ounce) can Ro-tel diced tomatoes & green chilies with juices
- 1 tablespoon chili powder
- 1/2 teaspoon onion powder
- 1/2 teaspoon smoked paprika
- 1/2 teaspoon ground cumin
- 8 ounces cream cheese softened
- 2 tablespoons chopped fresh cilantro
Instructions
- Soften the cream cheese by letting it sit at room temperature for at least one hour, or microwave it for about 30 seconds. Cut the softened cream cheese into cubes.
- Slice each chicken breast in half lengthwise to create four thinner pieces. Season both sides with salt and pepper.
- Heat the oil and butter in a skillet over medium-high heat. Add the chicken and sear until it is browned and cooked through, about 5 to 6 minutes per side. Move the cooked chicken to a plate.
- Reduce the heat to medium. Add the minced garlic to the skillet and cook for about 30 seconds.
- Add the chicken broth and Rotel to the skillet. Stir in the chili powder, onion powder, smoked paprika, and ground cumin. Stir everything together well.
- Stir in the cream cheese until it is fully incorporated. This may take a few minutes. Return the chicken to the skillet to warm through. If the sauce becomes too thick, add a small amount of chicken broth.
- Taste and add more salt and pepper if needed. Sprinkle the chopped cilantro over the top and serve immediately.
Notes
- For best results with the sauce, let the cream cheese soften before you begin cooking.
