Make this simple, flavorful Creamy Southwest Chicken skillet dinner using basic ingredients for a comforting meal with a Southwest twist.


Ingredients

  • 2 chicken breasts cut in half lengthwise
  • Salt & pepper to taste
  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • 3 cloves garlic minced
  • 1/4 cup chicken broth
  • 1 (10 fluid ounce) can Ro-tel diced tomatoes & green chilies with juices
  • 1 tablespoon chili powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon ground cumin
  • 8 ounces cream cheese softened
  • 2 tablespoons chopped fresh cilantro

Instructions

  1. Soften the cream cheese by letting it sit at room temperature for at least one hour, or microwave it for about 30 seconds. Cut the softened cream cheese into cubes.
  2. Slice each chicken breast in half lengthwise to create four thinner pieces. Season both sides with salt and pepper.
  3. Heat the oil and butter in a skillet over medium-high heat. Add the chicken and sear until it is browned and cooked through, about 5 to 6 minutes per side. Move the cooked chicken to a plate.
  4. Reduce the heat to medium. Add the minced garlic to the skillet and cook for about 30 seconds.
  5. Add the chicken broth and Rotel to the skillet. Stir in the chili powder, onion powder, smoked paprika, and ground cumin. Stir everything together well.
  6. Stir in the cream cheese until it is fully incorporated. This may take a few minutes. Return the chicken to the skillet to warm through. If the sauce becomes too thick, add a small amount of chicken broth.
  7. Taste and add more salt and pepper if needed. Sprinkle the chopped cilantro over the top and serve immediately.
