A simple and healthy slow-cooked pepper steak with vegetables.
Ingredients

- 1.5 lbs beef sirloin, sliced thin
- 2 bell peppers, sliced
- 1 onion, sliced
- 3 cloves garlic, minced
- 1 cup beef broth
- 2 tbsp soy sauce
- 1 tbsp cornstarch
- 1 tsp black pepper
- 1 tsp paprika
Instructions
- Place beef, bell peppers, onion, and garlic in the crockpot.
- Mix beef broth, soy sauce, cornstarch, black pepper, and paprika in a bowl.
- Pour the mixture over the beef and vegetables.
- Cover and cook on low for 6-7 hours or high for 3-4 hours.
- Serve hot over rice or noodles.
Notes
- For a thicker sauce, mix 1 tbsp cornstarch with 2 tbsp water and stir into the crockpot 30 minutes before serving.
- Add mushrooms or carrots for extra vegetables.
