Creamy dairy-free truffles with a hint of peppermint, perfect for holiday treats.
Ingredients

- 7 tablespoon plus 1 teaspoon full-fat coconut milk, stirred well
- 9 ounce vegan dark chocolate, very finely chopped
- 1/2 teaspoon peppermint extract
- 1 pinch kosher salt
- 1/3 cup Dutch-processed cocoa powder, for garnish (optional)
- 1/3 cup crushed peppermint candies, for garnish (optional)
Instructions
- Heat coconut milk in a saucepan over medium-low heat until simmering. Turn off heat and add chopped chocolate. Stir until smooth.
- Transfer mixture to a bowl. Add peppermint extract and salt. Stir, then refrigerate for 2-3 hours until firm.
- Scoop tablespoon-sized portions and roll into balls. Place on parchment paper.
- Roll truffles in cocoa powder and press crushed peppermint on top if desired.
- Store in the fridge for up to 1 week. Serve at room temperature.

- Use high-quality vegan chocolate for best results.
- Chill mixture until firm but still pliable for easy shaping.
