Creamy dairy-free truffles with a hint of peppermint, perfect for holiday treats.


Ingredients

  • 7 tablespoon plus 1 teaspoon full-fat coconut milk, stirred well
  • 9 ounce vegan dark chocolate, very finely chopped
  • 1/2 teaspoon peppermint extract
  • 1 pinch kosher salt
  • 1/3 cup Dutch-processed cocoa powder, for garnish (optional)
  • 1/3 cup crushed peppermint candies, for garnish (optional)

Instructions

  1. Heat coconut milk in a saucepan over medium-low heat until simmering. Turn off heat and add chopped chocolate. Stir until smooth.
  2. Transfer mixture to a bowl. Add peppermint extract and salt. Stir, then refrigerate for 2-3 hours until firm.
  3. Scoop tablespoon-sized portions and roll into balls. Place on parchment paper.
  4. Roll truffles in cocoa powder and press crushed peppermint on top if desired.
  5. Store in the fridge for up to 1 week. Serve at room temperature.
