Description

A simple, moist snack cake made with yogurt, perfect for everyday family baking.


Ingredients

  • 1 cup any flavour yogurt (room temperature)
  • 3 large eggs (room temperature)
  • 1/2 cup vegetable oil
  • 3/4 cup sugar
  • 1 1/2 cups all purpose flour or cake flour
  • 1 1/2 teaspoons baking powder
  • 23 tablespoons powdered sugar (for topping)
  • 1 cup blueberries (for sauce)
  • 1/3 cup sugar (for sauce)
  • 1/2 tablespoon cornstarch (for sauce)
  • 2 tablespoons water (for sauce)
  • 1/2 tablespoon lemon juice (for sauce)

Instructions

  1. Pre-heat your oven to 350F degrees (180 C). Grease an 8 inch (20cm) cake pan or a 9½-10 inch (24 cm) bundt pan.
  2. In a medium bowl, use a hand mixer on medium speed to lightly beat the eggs for approximately 30 seconds. Add oil, sugar, and yogurt. Beat for 1 minute until smooth.
  3. Add flour and baking powder. Beat until well combined, approximately another minute.
  4. Pour the batter into the prepared cake pan. Bake for approximately 35-40 minutes or until a toothpick inserted in the center comes out dry or with a few crumbs attached.
  5. Let the cake cool in the pan for 15-20 minutes, then move it to a wire rack to cool completely.
  6. When cool, sprinkle with powdered sugar if you want.
  7. To make the blueberry sauce: Combine blueberries, sugar, cornstarch, water, and lemon juice in a small saucepan. Cook over medium heat, stirring constantly, until the sauce thickens. Serve warm or cool over the cake.
