Make this light, comforting, and protein-rich egg drop soup quickly for a nourishing meal.


Ingredients

  • 4 cups low-sodium chicken broth
  • 1 tablespoon reduced-sodium soy sauce
  • 1/4 teaspoon ground ginger
  • 2 tablespoons cornstarch (or 1/2 teaspoon Xanthum gum for Keto)
  • 2 tablespoons water
  • 2 large eggs, beaten
  • 1/4 teaspoon kosher salt, plus more to taste
  • 1/4 teaspoon sesame oil, optional
  • 1/4 cup sliced green onions

Instructions

  1. Bring the chicken broth, soy sauce, and ground ginger to a boil in a pot.
  2. Combine the cornstarch and cold water in a small bowl to make a slurry. Stir the cornstarch slurry into the boiling broth until the soup thickens.
  3. Reduce the heat to a simmer. Slowly drizzle the whisked eggs into the soup while gently stirring in a circle motion in the same direction.
  4. Remove the pot from the heat. Add the salt, sesame oil if you are using it, and green onions. Add more salt to taste and serve.

Notes

  • Adding sesame oil provides a nice flavor, but it is optional if you do not have it on hand.
