- 3 cups all-purpose flour
- 1 teaspoon baking powder
- ¾ teaspoon baking soda
- ¼ teaspoon salt
- 1 tablespoon ground ginger

- 4 TBSP shortening
- ½ cup unsalted butter
- 1 cup dark brown sugar
- 1 large egg
- ½ cup molasses
- 2 teaspoons vanilla extract
- ¼ cup holiday nonpareils sprinkles
Instructions
- Whisk together the flour, baking powder, baking soda, salt, ginger, cinnamon, and cloves in a small bowl until blended.
- Beat the butter, shortening, brown sugar, and egg in a large bowl or stand mixer on medium speed until well blended.
- Add the molasses and vanilla and mix until combined.
- Gradually add the dry ingredients into the molasses mixture and blend until smooth.
- Press the dough flat and even into an 8×8 inch pan lined with parchment paper.
- Sprinkle the dough with festive sprinkles and lightly press them into the dough surface.
- Chill the dough for at least 2 hours, or up to 8 hours.
- Preheat the oven to 375°F. Line baking sheets with parchment paper.
- Remove the parchment lined cookie dough from the pan and set it on a cutting board.
- Cut the dough into 1/2 inch cubes using a ruler as a guide to create about 100 small cubes.
- Transfer the dough cubes to your prepared baking sheets, leaving one inch of space between each cube. You should fit about 30-35 cubes per sheet.
- Bake the cookies one sheet at a time for 7 minutes. Allow the cookies to rest on the hot pan for 2 minutes before transferring them to a wire rack to cool completely.
