- 2 1/2 cups rolled oats
- 3 medium ripe bananas
- 3/4 cup brown sugar
- 1/2 cup milk of choice
- 2 large eggs
- 1/3 cup oil
- 1/2 tsp baking soda
- 1 tsp salt
- 2 tsp vanilla extract
- 1 cup rolled oats
Instructions
- Preheat your oven to 350°F. Lightly spray a loaf pan with cooking spray and line the bottom with parchment paper. Set the pan aside.
- In a blender, pulse the 2 1/2 cups of rolled oats until they form a fine flour.
- Add the bananas, brown sugar, milk, eggs, oil, baking soda, salt, and vanilla extract to the blender. Blend until the mixture is smooth.
- Add the remaining 1 cup of rolled oats to the batter and pulse 2-3 times. You want some texture remaining in the oats.
- Pour the batter into the prepared loaf pan. Bake in the preheated oven for 65-70 minutes, or until a toothpick inserted into the center comes out clean.
