Gluten-Free Chicken Pasta Bake

Description

A hearty and comforting gluten-free pasta bake featuring chicken, bacon, and melted mozzarella, perfect for family dinners.


Ingredients

Scale
  • 200 grams gluten free pasta
  • 1/2 onion
  • 6 cherry tomatoes
  • 2 chicken breasts
  • 4 rashers of bacon
  • 350 ml passata
  • 2 tbsp tomato puree
  • 1 ball of mozzarella (about 125g drained)
  • Handful of fresh basil
  • 5075 grams grated cheddar cheese
  • 1/2 tsp oregano
  • 1/2 tsp thyme
  • 1/2 tsp garlic granules
  • 1 tbsp Worcestershire sauce
  • 1/2 stock cube (chicken)
  • 1 tsp sugar

Instructions

  1. Pre-heat the oven to 180C.
  2. Boil a large pan of salted water. Add the pasta and cook for 2 minutes less than the package time. Drain the pasta and set it aside.
  3. Chop the onion and cherry tomatoes into small pieces. Add them to a frying pan and cook on low heat, stirring often until the onion is golden brown. Add a little oil or water if the onion sticks.
  4. Chop the chicken and bacon into chunks. Add them to the pan. Cook until the chicken is sealed and starting to brown and the bacon is getting crispy.
  5. Add the passata, tomato puree, oregano, thyme, garlic granules, Worcestershire sauce, stock cube, and sugar to the pan.
  6. Bring the sauce to a boil, then reduce the heat to a simmer. Stir occasionally until the sauce thickens, about 10 minutes.
  7. Add the cooked pasta and cheddar cheese to the sauce. Stir everything together.
  8. Place the pasta mixture into an ovenproof dish.
  9. Break up the mozzarella and scatter it over the pasta. Scatter the chopped basil over the top too.
  10. Bake for 15-20 minutes, or until the mozzarella is browning and the sauce is bubbling. Serve hot.

Notes

  • You can use any type of onion you prefer.
  • Use caster sugar or any sugar for the sauce.
  • If you are using a stock pot, crush it before adding it to the sauce.
