  • ½ cup white sugar
  • ¼ cup almond butter
  • 1 large egg
  • 1 teaspoon vanilla extract
  • ¾ teaspoon peppermint extract
  • 2 crushed candy canes
  • 4 oz melted white chocolate (dairy-free if needed)

Instructions

  1. Beat butter and both sugars in a large bowl until combined.
  2. Add remaining wet ingredients and mix well.
  3. Incorporate dry ingredients, spooning flour and cocoa carefully.
  4. Refrigerate dough for 30 minutes.
  5. Preheat oven to 350°F.
  6. Roll dough into balls, sprinkle lightly with crushed candy canes.
  7. Bake on parchment-lined sheet for 10-13 minutes.
  8. Shape cookies with a round cutter while warm.
  9. Melt white chocolate and drizzle over cooled cookies.
  10. Sprinkle with more crushed candy canes.
