Ingredients

- 1 cup gluten free flour blend
- 1/2 cup cocoa powder unsweetened
- 1 cup cane sugar
- 1/2 cup brown sugar
- 1/2 cup light oil
- 1/2 cup non-dairy milk
- 3 large eggs
- 2 teaspoons pure vanilla extract
- 1/4 teaspoon salt
- 6 ounces chocolate chips
Instructions
- Preheat the oven to 350º F. Use the bake setting and place the oven rack in the middle position.
- Spray non-stick coconut oil in a mini muffin pan or line it with mini muffin liners.
- In a large bowl, whisk together gluten free flour blend, cocoa powder, cane sugar, brown sugar, and salt.
- Melt the chocolate chips in 20-second intervals in a microwave-safe dish, stirring between each interval.
- In a smaller bowl, whisk together light oil, non-dairy milk, eggs, melted chocolate chips, and vanilla extract.
- Pour the wet ingredients into the dry ingredients and mix.
- Fill each muffin tin section 3/4 full with the batter.
- Bake for 15-20 minutes.
- Allow the brownie bites to cool before decorating.
Notes
- For a crinkle top, beat the eggs and sugar with a mixer for 3-5 minutes before adding the other wet ingredients.
