A gluten-free version of classic sugar cookies, perfect for rolling, cutting, and decorating.
Ingredients

- 1 cup (200 g) granulated sugar
- ½ cup (113 g) unsalted butter, softened
- 1 large egg, room temperature
- 1 tablespoon milk (or dairy-free)
- 2 teaspoons vanilla extract (or 1 tsp. almond extract + 1 tsp. vanilla)
- ¼ teaspoon salt (omit if butter is salted)
- 2 cups (292 g) gluten-free all-purpose flour (Cup4Cup recommended)
Instructions
- Cream sugar and butter until light and fluffy (about 3 minutes).
- Add egg, milk, vanilla, and salt. Beat until smooth.
- Mix in flour at low speed. Chill dough for 1 hour or freeze for 30 minutes.
- Preheat oven to 350°F. Line baking sheets with parchment paper.
- Roll out dough to 1/4″ thickness. Cut with cookie cutters and transfer to baking sheets.
- Bake for 10-12 minutes until set. Cool before decorating.
Notes
- Let cold dough sit 5-10 minutes if too firm to roll.
- Store unbaked cutouts in the fridge to prevent spreading.
