Make this easy, one-pan gluten-free taco skillet dinner using lean ground meat, rice, beans, and corn for a flavorful Tex-Mex meal.

- 1 lb Lean Ground Beef or Turkey
- 1 Small Onion chopped
- 1 cup Long Grain Rice
- 2 cups Water or broth
- 1 cup Tomato Sauce or marinara
- 1 can Black Beans drained & rinsed
- 1 cup Corn thawed if frozen
- Taco Seasoning
- Cilantro for topping
- Tomatoes for topping
- Peppers for topping
- Shredded Lettuce for topping
- Avocado for topping
Instructions
- Brown and crumble ground beef in a large skillet. Drain excess grease.
- Add onions to the pan and cook for a few minutes until softened.
- Add water, tomato sauce, and taco seasoning; mix well.
- Bring the liquid to a boil, then add rice. Lower the heat.
- Cover and cook the rice according to package directions until tender. Stir halfway through and add a little more water if needed.
- Chop your vegetables and prepare other toppings while the rice cooks.
- When the rice is done, remove the lid and stir in beans and corn. Mix well.
- Add desired toppings and serve.
Notes
- To save time, chop your vegetables for toppings ahead of time to make this meal quicker.
