Description

Make this quick and flavorful gluten-free pasta bowl using fresh ingredients for an easy weeknight meal.

Ingredients

Scale
  • 12 ounces gluten-free rotini pasta (Barilla preferred)
  • 1 cup basil pesto sauce (store-bought or homemade)
  • 10 ounces cherry tomatoes (halved)
  • 8 ounces fresh mozzarella cheese pearls
  • ½ cup shredded parmesan cheese
  • ½ cup pine nuts (toasted)
  • ¼ cup fresh basil (sliced or torn)

Instructions

  1. Cook the pasta in a large pot of boiling water following package directions. Drain and rinse the pasta well.
  2. Add the drained pasta to a large serving bowl with the pesto, cherry tomatoes, mozzarella cheese, parmesan cheese, and pine nuts.
  3. Gently toss the ingredients to combine them.
  4. Garnish with fresh, torn basil and extra parmesan cheese, if you want more.
  5. Serve the bowl immediately at room temperature.

Notes

  • If the pasta salad sits, it might absorb the sauce. Add more pesto sauce as needed to reach your preferred taste.
