Description

Make visually appealing, festive green velvet cupcakes with a classic cream cheese frosting, perfect for St. Patrick’s Day or any celebration.


Ingredients

  • 1 ¼ cup granulated sugar
  • ½ cup unsalted butter
  • 3 eggs
  • 3 drops green food coloring
  • 2 ½ cups all-purpose flour
  • ½ teaspoon salt
  • ½ teaspoon baking soda
  • 1 ¼ teaspoon baking powder
  • 1 cup buttermilk
  • 2 teaspoon vanilla extract
  • 8 ounces cream cheese – softened
  • ½ cup unsalted butter – softened
  • 4 cups confectioner’s sugar
  • 1 teaspoon vanilla extract
  • green sanding sugar or shamrock sprinkles

Instructions

  1. Preheat your oven to 350° F and line 18 muffin pans with liners.
  2. Cream the sugar and butter in a large bowl.
  3. Add the eggs one at a time and beat to incorporate.
  4. Add food coloring and vanilla extract.
  5. In a separate bowl, mix the flour, salt, baking soda, and baking powder well.
  6. Add the buttermilk to the wet ingredients.
  7. Slowly beat in the flour mixture and mix well.
  8. Fill the liners ¾ of the way full.
  9. Bake in the preheated oven for about 17 minutes. Check for doneness with a toothpick.
  10. Beat the cream cheese until it is smooth and broken down.
  11. Add in the softened butter and beat until it is blended well.
  12. Add in the vanilla and confectioner’s sugar.
  13. Beat until smooth and creamy.
  14. Pipe frosting onto cupcakes and decorate with sanding sugar or sprinkles.

Notes

  • Substitute the buttermilk for 1 cup of milk plus 1 tablespoon of lemon juice or white vinegar. Allow this mixture to sit for 10 minutes before using.
  • You can adjust the amount of food coloring you add. Slowly add the food coloring to reach your desired tint.
