Description

Make this simple, nutritious beef stew in a Dutch oven. It features tender beef, fresh vegetables, and a savory broth, perfect for a balanced, comforting meal.


Ingredients

  • 2 lbs bottom round beef
  • 1/4 cup all-purpose flour
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp kosher salt
  • fresh cracked pepper
  • olive oil spray
  • 1 cup celery, chopped
  • 1 cup baby carrots
  • 1 large onion, chopped
  • 4 sprigs thyme
  • 2/3 cup dry red wine
  • 5 cups beef broth
  • 2 tbsp balsamic vinegar
  • 3 tbsp tomato paste
  • 1 lb golden baby potatoes
  • 2 tbsp corn starch
  • 1/4 cup water
  • fresh parsley

Instructions

  1. Trim the fat off the beef and cut it into bite-sized chunks.
  2. Add the garlic powder, onion powder, 1/2 tsp kosher salt, and fresh cracked pepper to the flour. Toss the beef in the flour until it is thoroughly coated.
  3. Preheat a dutch oven over medium high heat and add olive oil spray.
  4. Working in batches, sear the beef on all sides to get a golden crust. Remove the partially cooked beef from the pot and set it aside.
  5. Add more olive oil spray to the empty dutch oven and add the onions. Sauté for 5 minutes or until tender.
  6. Add the wine and use a wooden spoon to scrape any browned bits off the bottom of the pot.
  7. Add the beef broth, tomato paste, balsamic vinegar, carrots, and celery. Add the cooked beef back in, along with the thyme sprigs and another 1/2 tsp kosher salt.
  8. Cover the pot and simmer on medium low for 45 minutes.
  9. After 45 minutes, add the baby potatoes, cover, and simmer for another 45 minutes.
  10. Combine the cornstarch with the water to form a slurry, and pour it into the pot. Simmer for 5 minutes or until the stew thickens.
  11. Garnish with fresh parsley.

Notes

  • Work in two smaller batches when searing the beef to prevent steaming and ensure proper browning.
  • This recipe can be adapted for a slow cooker; brown the beef and sauté the onions first, then transfer all ingredients (except the cornstarch slurry) to the slow cooker and cook on low for 6-8 hours or high for 3-4 hours. Thicken with the slurry at the end.
