- 8 Flour tortillas
- 1 1/2 cups Shredded cheddar, monterey jack, or Mexican-blend cheese
- 1 cup Shredded, cooked chicken
- Fresh salsa, to taste
- Sour cream, to taste
- Guacamole, to taste
Instructions
- Use a large heart-shaped cookie cutter, or a paper template and kitchen shears, to cut heart shapes from the flour tortillas.
- Place four heart-shaped tortillas on a cutting board. Top each with shredded cheese, then top with shredded chicken, and then more cheese.
- Place the remaining heart-shaped tortillas on top of the filled ones.
- Cook the quesadillas on a nonstick skillet or griddle over medium heat. Flip when each side is lightly browned and the cheese is melted.
- Serve the quesadillas with salsa, sour cream, and/or guacamole.
Notes
- You can use any seasoned cooked chicken, such as Slow-Cooker Tamale Chicken or Chicken Carnitas, for the filling.
- This recipe is easy to customize with different cheeses or fillings.
