  • 1 tablespoon tomato paste
  • 6 cups beef broth (low sodium preferred)
  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon dried thyme

  • 1 bay leaf

  • ½ teaspoon black pepper

For the Barley:

  • ¾ cup pearl barley (rinsed)

Instructions

Step 1: Brown the Beef

  1. Heat 1 tablespoon olive oil in a large pot or Dutch oven over medium-high heat.
  2. Add the beef pieces and brown on all sides, about 5 minutes. Remove and set aside.

Step 2: Build the Flavor Base

  1. In the same pot, add 1 tablespoon olive oil, then sauté the onions, carrots, and celery until softened, about 5 minutes.
  2. Stir in the garlic and tomato paste and cook for another 30 seconds, until fragrant.

Step 3: Simmer the Soup

  1. Return the browned beef to the pot. Pour in the beef broth and add Worcestershire sauce, thyme, oregano, bay leaf, salt, and pepper. Stir well.
