Description
Make this hearty sausage tortellini minestrone for a warming and flavorful meal. This soup combines Italian sausage, classic minestrone vegetables, beans, and cheese tortellini in a rich tomato broth.

- 1 tbsp olive oil
- 1 lb Italian sausage, casings removed
- 1 medium onion, diced
- 3 garlic cloves, minced
- 2 carrots, chopped
- 2 celery stalks, chopped
- 1 zucchini, diced
- 1 cup green beans, chopped
- 1 red bell pepper, chopped (optional)
- 1 can (28 oz) crushed tomatoes
- 1 can (14.5 oz) diced tomatoes
- 6 cups chicken or vegetable broth
- 1 tbsp tomato paste
- 1 can (15 oz) kidney beans, drained & rinsed
- 1 can (15 oz) cannellini or navy beans, drained & rinsed
- 1 tsp dried basil
- 1 tsp dried oregano
- 1 tsp Italian seasoning
- 1/2 tsp thyme
- 1 tsp salt
- 1/2 tsp pepper
- 1/2 tsp red pepper flakes (optional)
- 9 oz cheese tortellini
- 2 cups fresh spinach or kale
- Parmesan cheese for serving
- Fresh basil or parsley (optional)
Instructions
- Heat olive oil in a large soup pot over medium-high heat. Add sausage and cook 6–7 minutes, breaking it apart until browned. Add diced onion and cook 3 minutes, then add garlic and cook 1 minute.
- Stir in carrots, celery, zucchini, green beans, and bell pepper (if using). Cook 5–7 minutes to soften slightly.
- Add crushed tomatoes, diced tomatoes, and tomato paste. Stir well. Pour in the broth and mix. Season with basil, oregano, Italian seasoning, thyme, salt, pepper, and red pepper flakes (if using). Bring soup to a boil, then reduce to a steady simmer. Cook 15–20 minutes, until vegetables are tender.
- Stir in kidney beans and cannellini beans. Simmer 5 minutes. Add tortellini and cook 4–6 minutes if fresh, or 6–8 minutes if frozen. Stir halfway through to prevent sticking.
- Turn heat to low. Add spinach or kale and stir until wilted (1–2 minutes). Taste and adjust seasoning.
- Ladle into bowls. Top with freshly grated Parmesan, fresh basil or parsley, and cracked black pepper.
Notes
- If using frozen tortellini, add a few extra minutes to the cooking time.
- You can substitute kale for spinach if you prefer a firmer green.
