Description

Quick, protein-rich blueberry pancake muffins perfect for meal prepping or a fast, satisfying breakfast.


Ingredients

  • 250 g Kodiak Power Cakes Pancake Mix
  • 29 g Unflavored Collagen Protein Powder
  • 1 cup Whole Milk
  • 1 Large Whole Egg
  • 1 tsp Pure Vanilla Extract
  • ½ tsp Ground Cinnamon
  • 120 g Blueberries

Instructions

  1. Pre-heat your oven to 350°F.
  2. Grease muffin tins with non-stick cooking spray.
  3. In a large bowl, combine all ingredients except blueberries. Mix until smooth by hand or using an electric mixer.
  4. Fill each muffin tin ¾ of the way full with the batter.
  5. Drop 4 – 5 blueberries into each muffin cup.
  6. Bake at 350°F for 15 minutes, or until golden brown.
