- 1 lb. haricots verts (French green beans), trimmed
- 3 Tbsp. unsalted butter
- 1/2 cup raw sliced almonds
- 1 shallot, finely chopped
- 2 cloves garlic, finely chopped
- Zest of 1 lemon
- 2 tsp. fresh lemon juice
- Freshly ground black pepper to taste
Instructions
- Bring a large pot of salted water to a boil. Prepare an ice bath by filling a large bowl with ice and water. Cook green beans until crisp-tender, 2 to 3 minutes. Immediately transfer beans to the ice bath using a slotted spoon. Drain the beans.
- Melt butter in a large skillet over medium-low heat until lightly bubbling. Add almonds and cook, stirring frequently, until golden brown, 3 to 4 minutes. Reduce heat to low and add shallots and garlic. Cook, stirring occasionally, until fragrant, 2 to 3 minutes. Add green beans and toss until combined and the beans are tender. Stir in lemon zest and juice, tossing to coat. Season with salt and pepper.

- For best results, cook the green beans until they are slightly undercooked, as they will finish cooking when tossed with the other ingredients.
